Stir
Fry Rabbit by Judy Nugent
3 or 4 rabbits - meat
cut into strips, be sure shot and sharp bones are removed
3 tsp. of water
2 cups broccoli
2 cups carrots sliced
1 cup red pepper sliced
1 cup yellow pepper sliced
1 small can of water chestnuts (optional)
3 green onions, chopped
1 clove of garlic, minced
1 cup soy sauce
2 Tbs. olive oil
1 tsp. sesame oil
sugar to taste
salt and pepper to taste
Place the rabbit meat
in a dish with a few teaspoons of water. Cover and bake in a 275
degree oven for a hour.
Put the olive oil and
sesame oil in a wok. Heat over high heat until hot. Place the cooked
rabbit into the hot oil along with the broccoli, carrots, and peppers.
After stir frying for a minute, add the soy sauce. Cook until almost
done. At the last minute add the garlic and green onions. Cook one
minute longer. Add sugar to the sauce to taste.
Options: for a thicker
sauce, add some corn starch. For more heat, add some red pepper
flakes.
Serve over rice
